This No-Bake Key Lime Pie Is Easy To Make
One of the best things about this no-bake recipe is how simple it is. It takes just 10 minutes to prepare. The crust is made with pecans, walnuts, and Medjool dates, with hints of vanilla, cinnamon and Himalayan pink salt. (It’s so delicous!) Simply pulse the ingredients in a food processor and press the mixture into a springform pan or pie plate.

Instead of traditional ingredients like sweetened condensed milk and egg yolks, this dairy-free filling uses ripe avocado for a velvety smooth texture and rich creaminess. Fresh lime juice adds the signature tart flavor, while maple syrup provides just the right amount of sweetness.
When making the filling, be sure to use ripe avocados, as they help balance the tartness of the the lime juice. Taste the filling before pouring it into the crust and adjust the maple syrup if you prefer a sweeter pie.
Once the filling is ready, pour it into the prepared crust and smooth the top with a rubber spatula. The hardest part is waiting for the pie to chill and set! After about two hours in the freezer, garnish with fresh lime wheels and serve chilled.
This pie can easily be made a day ahead, making it ideal for parties, potlucks and summer entertaining. Because it’s vegan, gluten-free, and paleo-friendly it’s always a crowd-pleaser.

Raw No-Bake Key Lime Pie (GF, Vegan, Paleo) Recipe
Yields: 6-8 servings
Prep: 10 minutes | Cook: 0 minutes | Total: 10 minutes (plus 2 hours total chill time)
Ingredients:
Crust:
- 1 cup pecans
- 1 cup walnuts
- 1½ cups medjool dates, pits removed
- 1 teaspoon vanilla extract
- ½ teaspoon himalayan pink sea salt
- ¼ teaspoon ground cinnamon
Pie Filling:
- 2 cups pureed avocado (about 3-4 avocados depending on size)
- ½ cup fresh lime juice
- ¼ cup maple syrup (+ more to taste)
- 1 ½ teaspoons vanilla extract
- ½ teaspoon himalayan pink sea salt
- Optional garnish: freshly cut lime wheels
Raw No Bake Key Lime Pie Directions:
1. Add all crust ingredients to a food processor and pulse until mixture resembles a sticky coarse crumb texture.
2. Pour the crust mixture into an 8” spring-form pan (can also use a traditional pie pan). Use clean hands to firmly press the mixture evenly into the bottom of the pan and half way up the sides. Set aside.
3. Add the pie filling ingredients to a food processor and pulse until smooth, creamy and combined. Taste and adjust sweetness if desired.
4. Pour the pie filling into the prepared pie crust and use a rubber spatula to create a smooth and even surface.
5. Place the pie in the freezer to firm up for at least 2 hours. Garnish with fresh lime wheels if desired and serve chilled.
Notes:
Pie will keep for up to 2 days in the fridge.
