Amazing Award-Winning Double Chocolate Volcano Cake

I have a confession. As healthy as I try to eat, I am a sucker for chocolate cake…and not the healthy kind. I want it decadent. Yet I am not the world’s most proficient baker, so I like a recipe I can master easily. Case in point? This delicious chocolate volcano cake.

This volcano cake is a double chocolate Bundt cake made with chocolate toppings, heavy cream and lots of colors to create an impression of an erupting volcano. It has crushed candies at the base as well as the top to represent crushed rocks around the volcano. You can use different colors to ice the cake, including a green base to resemble an island, and a red top to show an erupting volcano.

Apart from the colors, lighting a fire in the middle of the volcano cake will make everything come close to reality. It does not only look perfect but the taste is also heavenly, and you should try it out in your kitchen.

Mixing the ingredients in the right proportions is the key to baking the perfect Bundt cake. Once you have the cake, you can now bring in your creative skills in decoration to create something close to a real erupting volcano. By placing a round candle, tea light or a sterno canned heat in the center you can really make it come to life.

Double Chocolate Volcano Cake

Serves: 8
Preparation time: 1 hour 20 minutes

Ingredients:

8 oz butter, softened
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
½ cup cream cheese
4 eggs
1 1/3 cup sugar
Toppings:
7oz semisweet chocolate chips
½ cup heavy cream
1 tbsp butter, unsalted

Decoration:
Crushed candies, chocolate, food coloring

Directions:

1. Preheat the oven to 325°F. Butter a large 14-cup Bundt pan. Set aside.

2. In a medium bowl, mix together flour, cocoa powder, baking soda, and salt.

3. In a bowl of a stand mixer, beat eggs and sugar until fully incorporated. Now, add butter and cream cheese. Continue to beat for another 1-2 minutes.

4. Finally, add the flour mixture and mix until a completely smooth batter.

5. Transfer the batter to the prepared pan and bake for about an hour or until a toothpick inserted in the middle comes out clean.

6. When done, remove from the oven and cool to room temperature.

7. Meanwhile, prepare the topping. Add chocolate to a microwave-safe bowl and microwave until completely melted.

8. Transfer the melted chocolate to a small saucepan and heat up over medium heat. Stir in heavy cream and butter. Heat up mixing constantly.

9. Pour the topping over the chilled cake and optionally decorate with some crushed candies or food coloring. You can also light a fire in the middle of the cake for some extra effect. Enjoy!
