What’s Baking? Quick, Easy and Delicious Apple Spice Baked Oatmeal

I have become obsessed with baked oatmeal. Why? Well not only is it delicious and easy to make, you don’t have to think about breakfast for a few days (unless your whole family eats it). I tend to7y8 And while I have a few baked oatmeal recipes on hand, this one with apple spice is my current favorite. While I’m baking it, the spices leave an amazing fragrance and make my home smell like fall.

Delicious Apple Spice Baked Oatmeal

If you are gluten-free you can use gluten-free oatmeal. And if you are dairy free, use diary-free milk. If you don’t like pecans, use any nut you like or leave them out entirely. The great news is that this recipe is flexible and hard to mess up. Since I like to increase the protein I sometimes add a little protein powder and a dollop of high protein Greek yogurt on top. 

This recipe is light on sugar, so if you’d like it sweeter you can always add a little more maple syrup when it’s baking or drizzle a little on top before serving. I also add a little more cinnamon spice because that’s how I roll and it gives it a naturally sweeter taste.

Apple Spice Baked Oatmeal (Vegan, GF, Dairy Free)

Yields: 9-12 servings

Prep: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes

Apple Spice Baked Oatmeal ingredients

Ingredients:

  • 2 cups rolled old-fashioned oats (certified gluten free if necessary)
  • 1.5 teaspoons cinnamon
  • ⅛ teaspoon allspice
  • ⅛ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ sea salt
  • 2 cups dairy free milk
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup apple, diced and peeled (divided)
  • ½ cup chopped pecans

Directions:

  1. Preheat oven to 375 degrees F. Grease an 8×8” baking dish and set aside.
  2. In a large mixing bowl, add oats, cinnamon, allspice, nutmeg, baking powder, salt, milk, applesauce, maple syrup, vanilla extract and ¾ cup of the diced apple. Mix until ingredients are fully incorporated.
  3. Transfer mixture into prepared baking dish and top with remaining cup of diced apple and ½ cup chopped pecans.
  4. Bake in preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before slicing and serving.

Notes:

  • The apple pie spices included in this recipe leave an amazing fragrance in your home when baking!
  • Toppings shown in photos include: thinly sliced apples, a pinch of cinnamon, and additional chopped pecans for added crunch.
  • This recipe is not overly sweet. To make it sweeter you could increase the maple syrup in the recipe to ⅓ cup. Or, when served warm, a drizzle of maple syrup will give it a little extra sweetness.
  • Can be fantastic for meal prep. Assemble and bake the day before, allow it to firm up overnight, slice and store for a quick breakfast bar, add to kids lunches, snacks, etc.
  • This recipe will firm up with time.
  • Cover leftovers with plastic wrap and store in the fridge for up to 4 days.
