These Yummy Apple Cinnamon Baked Donuts are Gluten Free

Who doesn’t love donuts? Especially in the fall when they are apple or pumpkin flavored? But let’s be serious, donuts don’t necessarily love us. In fact, I joke I might as well just slap them directly to my hips. But they are also typically full of gluten. And I know many of us do not do well with gluten. So if you are like me, you will want to try these apple cinnamon baked donuts because they’re gluten free.

Apple Cinnamon Baked Donuts

Better yet these donuts are baked, not fried in oil so they are much healthier. Now you no longer have to sit and salivate when you see gluten-eating people around you tuck into a soft, fluffy fall-themed apple cinnamon donut because we now have our very own. And frankly, I like these just as well. Oh who am I kidding? I rarely eat regular donuts, but these baked donuts are a different story.

What is Gluten Anyway?

There is so much confusion when it comes to gluten. Gluten is a protein found in wheat, barley, rye and triticale, which is a cross between wheat and rye and many people are finding they have a problem with it. They may experience symptoms like bloating, cramping, headaches, rashes and constipation. There are also some who suffer from celiac disease which is a severe autoimmune disorder where the body can’t process gluten and it can be life-threatening if not properly diagnosed. Therefore, a gluten-free diet is one that avoids foods containing gluten. Foods made with corn including cornmeal, grits and polenta are all gluten-free. The vegetables allowed on a gluten free diet include beans, seeds and legumes. Aslo nuts in their natural, unprocessed forms, eggs, lean, non-processed meats, fish and poultry and most low-fat dairy products are allowed.

It’s Time To Make The Donuts

You might be thinking making your own donuts is time-consuming, but these baked apple donuts take less than half an hour from start to finish, and that includes the 10 minutes of prep time!

The Dough In Donuts

This baked donut recipe making begins with a great dough. This one is actually a batter made from gluten-free flour, a little avocado oil and sugar-free applesauce which replaces fat. Try not to make any donut dough too far in advance of baking because fresher dough is best.

Making the Glaze

The best part of the donut is the glaze. Am I right? This glaze is made with cinnamon, powdered sugar, maple syrup and a splash of milk. Yet the finished product tastes super decadent. Move over Krispy Kreme!

Apple Cinnamon Baked Donuts (GF)

Yields: 9 servings

Prep: 10 minutes| Cook Time: 14 minutes | Total Time: 24 minutes

Donut Ingredients:

  • 1 ½ cups gluten free all-purpose flour
  • ½ teaspoon xanthan gum (exclude if your flour blend contains it)
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 3 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup unsweetened applesauce

Glaze Ingredients:

  • 1 cup powdered sugar
  • ¼ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 4 tablespoons maple syrup
  • 1-2 tablespoons milk

Directions:

  1. Preheat oven to 350 degrees F. Spray a donut pan with cooking spray and set aside.
  2. In a large bowl, add sugar, avocado oil, vanilla extract, eggs and applesauce. Whisk to combine. 
  3. Add remaining donut ingredients to the same bowl and mix to fully incorporate. 
  4. Transfer donut batter to a large ziplock bag, remove any air from the bag and seal it closed. 
  5. Cut off a corner of the ziplock bag and pipe the batter until it fills each well of the donut pan
  6. Bake for 14-16 minutes or until donuts are lightly golden brown. Continue until all batter has been used. 
  7. Place a wire rack over a baking sheet and set aside.
  8. Add glaze ingredients to a small bowl and stir to combine. Dip each donut into the glaze and place on wire rack to allow excess icing to drip off. Serve warm.
