We are big weekend brunch eaters in my household. We used to go out, but over time (and with dietary needs in mind), I’ve come to love hosting brunch at home. It’s more relaxed, more affordable and honestly, so much easier on the schedule — all bonuses in my book.
Since we’re all fans of eggs and bacon, this keto overnight breakfast casserole has become one of my go-to recipes. It’s especially perfect for holidays like Easter or anytime you’re hosting guests and want something simple but satisfying.
Editor’s note: This recipe was originally published in 2022 and has been updated for spring brunch season.

An Easy Make-Ahead Breakfast Idea
What I love most about this recipe is how simple it is to prepare ahead of time. I prep everything the night before, cover the dish, and let it chill in the refrigerator overnight.
In the morning, while I’m making my coffee, I preheat the oven and pop it in. By the time I’m pouring my second cup, breakfast is ready.
This is one of my favorite tricks for hosting brunch — it keeps the morning stress-free and lets you actually enjoy your time with guests.
