I adore a good salad. In fact I crave them. Especially one that’s loaded with flavor and packed with healthy ingredients. So you are going to love my Mediterranean Chickpea Salad. It really is the is the ultimate summer salad so you may want to bring this to every potluck and/or event you have this summer.

Mediterranean Chickpea Salad with Lemon Vinaigrette Dressing

Essentially, chickpeas are tossed with tomatoes, cucumber, bell pepper, red onion, feta and cilantro for a salad that’s light enough for an easy lunch yet hearty enough for a dinner side dish. The star of this show however, is the garlicky Lemon Vinaigrette Dressing.

I always have cans of chick peas (garbanzo beans) in my pantry. Why? They are a rich source of vitamins, minerals, and fiber. Chickpeas also offer a variety of health benefits…they are packed with protein, aid in weight management, improve digestion, and reduce your risk of disease. And since this delicious legume is high in protein it makes an excellent meat replacement in many vegetarian and vegan dishes.

Mediterranean Chickpea Salad Tips & Tricks

  • This salad is a fantastic meal prep option.
  • It stays fresh (and crisp!) stored in an airtight container in the refrigerator for up to 5 days.
  • Cilantro may be swapped for fresh parsley or fresh basil. I get many don’t like the taste of one or the other.
  • This salad is delicious on its own. However, it makes a great side dish to grilled fish or chicken.

Mediterranean Chickpea Salad + Lemon Vinaigrette Dressing Recipe

Yields: 8 servings

Prep: 10 minutes | Cook Time: 0 minutes | Total Time: 35 minutes

Mediterranean Chickpea Salad 7 ingredients in bowls fountainof30

 Salad Ingredients:

  • 2 15 oz cans chickpeas, drained and rinsed
  • 1 english cucumber, diced
  • 1 red bell pepper, diced
  • 1 10 oz package of cherry tomatoes, halved
  • ¼ cup red onion, diced
  • 5 oz feta cheese, crumbled
  • ⅓ cup cilantro, finely chopped

Lemon Vinaigrette Dressing 6 ingredients in bowls fountainof30

Dressing Ingredients:

  • ⅓ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • 1 teaspoon fresh garlic, minced
  • Sea salt and pepper to taste

Directions:

  1. Add salad ingredients to a large mixing bowl and set aside.
  2. In a small bowl, add the lemon vinaigrette dressing ingredients. Whisk to combine.
  3. Pour the dressing over the salad.
  4. Toss to combine and enjoy!

Notes:
