Rich, Garlicky and Incredibly Delicious Marry Me Chicken (Gluten Free)

You might be wondering, “What is Marry Me Chicken?” It’s a dish of tender sautéed boneless chicken breast in a rich, creamy sun-dried tomato sauce. Marry Me Chicken recipes have gained popularity since going viral on TikTok. The term “marry me” comes from claims it will win over the heart of anyone you cook it for. Because as we all know, they way to a lover’s heart is through his/her stomach.

However, my Marry Me Chicken recipe is the best…obviously. Seriously, who can resist deliciously creamy chicken breast recipes? But I’m already married. See? It works! The added bonus is that this recipe is also low carb, gluten-free, keto-friendly, and most importantly, family-friendly. Oh and did I mention it only takes 5 minutes to prep?

The sauce in this recipe is rich, garlicky and incredibly delicious with the tangy sundried tomatoes! It makes a fair amount of sauce that can be spooned over the chicken and a side of pasta or cauliflower rice. Serve with vegetables of your choice and a good crusty bread.

Marry Me Chicken Recipe

Yields: 3 servings

Prep: 5 minutes | Cook Time: 30 minutes | Total Time: 45 minutes

Ingredients:

  • 2 tablespoons avocado oil
  • 3 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon basil
  • ¼ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • ½ cup sundried tomatoes, chopped
  • ¼ cup parmesan cheese, grated

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Add oil to a large cast iron skillet over medium heat.
  3. Add salt, pepper, basil, thyme, crushed red pepper to a small bowl. Stir to combine.
  4. Season both sides of the chicken breast with the seasoning mixture.
  5. Cook the seasoned chicken breasts in the preheated cast iron skillet for 3-4 minutes each side.
  6. Transfer chicken to a plate and set aside.
  7. Add minced garlic to the hot skillet and cook for 1 minute or until fragrant.
  8. Pour in chicken stock to deglaze the pan, and use a wood spoon to scrape off any brown bits stuck to the bottom of the skillet.
  9. Pour in the heavy cream. Stir to incorporate.
  10. Stir in parmesan cheese.
  11. Add chopped sundried tomatoes and stir to combine. Allow sauce to come to a low simmer.
  12. Add chicken breasts back into the skillet and spoon a little sauce over the chicken.
  13. Place skillet in preheated oven for 15-18 minutes or until chicken is cooked to 165 degrees F. Enjoy warm served over a bed of pasta, or with a side of rice or mashed potatoes.
