Quick and Easy Low Carb Bacon Wrapped Jalapeño Popper Stuffed Chicken

What can be more pleasing to the pallet than jalapeno poppers? How about chicken a breast stuffed with a spicy and creamy jalapeno popper cheese mixture? And now let’s make it even better yet and wrap it all up in bacon! (Bacon makes everything better, doesn’t it?) No wonder this Low Carb Bacon Wrapped Jalapeño Popper Stuffed Chicken recipe is always a hit.

Jalapeño Popper Stuffed Chicken

This stuffed chicken breast recipe is really quick and easy to make, too. And dinner guests enjoy it too. But there’s not need to wait for a special occasion to make this bacon wrapped chicken recipe. It’s a treat to serve your family any night of the week. I know they will love it! It’s also packed with protein and has a perfect calorie to protein ratio (493 calories and 52 grams of protein per serving).

I like to serve it with mashed potatoes (or cauliflower to keep it low-carb) and roasted green vegetables like broccoli or asparagus or a green salad.

The blend of flavors in this chicken entree is incredible. The spicy jalapeños with cool cream cheese stuffing is so yummy, especially when finished off in a wrapping of crispy bacon. Be sure to use regular bacon and not thick sliced because it won’t crisp up as well. After you bake the chicken for 30 minutes, simply switch your oven to broil the last 5-8 minutes. Low Carb Bacon Wrapped Jalapeño Popper Stuffed Chicken

Yields: 4 servings

Prep: 15 minutes| Cook Time: 35 minutes | Total Time: 50 minutes

Ingredients:

  • 4 boneless skinless chicken breasts
  • 4 oz cream cheese, softened
  • ¾ cup shredded cheddar cheese
  • 3 tablespoons jalapeño peppers, seeds removed and minced
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • 8 slices original bacon
  • Cooking spray

Directions:

  1. Preheat the oven to 375 degrees F. Spray a baking sheet with cooking spray and set aside.
  2. In a medium-sized bowl, add the softened cream cheese, shredded cheddar cheese, minced jalapeño, garlic powder and onion powder. Stir until fully incorporated.
  3. Place the chicken breasts on a cutting board. Insert a sharp knife into the thickest side of the chicken. Cut a pocket, being careful not to cut all the way through the chicken.
  4. Place ¼ cup of the cream cheese mixture into each chicken pocket.
  5. Wrap each chicken breast with two slices of bacon and place on the prepared baking sheet.
  6. Cook chicken in the preheated oven for 30 minutes or until fully cooked. Change the oven setting to broil and cook for an additional 5-8 minutes to allow the bacon to crisp up.
  7. Remove from the oven and allow the chicken to rest for 5 minutes before serving.

Notes:

Try to avoid using thick-cut bacon for this recipe as it won’t cook as quickly and crisp up as nicely as regular bacon will. If that’s all you have available, add an additional 10 minutes to the cooking time.

This dish goes great with mashed potatoes, roasted vegetables and/or a green salad.
