My eldest son is the world’s pickiest eater. Yes, I know it’s a control thing – and it works. He eats about 5 foods at any given time and of course, he loves snacks. So on one of the kids’ more recent days off from school (do they ever go to school?) I took them to our local farmer’s market. They sampled some kid friendly organic chicken burgers and Liam flipped over the Buffalo chicken wing flavored one. Woot!
I paid $20 for 12 patties and he ate them all within 2 weeks! Of course he wanted more, but our farmer’s market is now closed for the season. They are also insanely expensive to eat ALL THE TIME. So I decided to figure out how to make organic chicken burgers myself. And to my surprise, I was successful!

Kid Friendly Organic Chicken Burgers – Buffalo Style
Ingredients:
1 lb. Organic ground chicken
1 cup Organic bread crumbs
1/4 cup extra sharp provolone, shredded
1/4 cup crumbled blue cheese, small crumbles only
1/2 cup Frank’s Hot Sauce (the only hot sauce a Buffalonian will use)
1/2 teaspoon salt
Pepper (to taste)
Instructions:
Mix ingredients together well.
Roll into patties. I used a rolling pin and large round cookie cutter to make sure they were about 1/8 thick.
Makes about 10-12 burgers which freeze beautifully.
Use a grill and make sure they cooked all the way through. After all, it’s chicken.
