How To Make Leftover Holiday Ham & Cheese Quiche

My younger son requested ham for our Christmas dinner so I obliged and ordered one from HoneyBaked Ham Company. It was delicious and even though I ordered a small, we had a lot of leftovers. My husband requested quiche (real men eat quiche) and told our sons it’s basically an omelet. So I made ham and cheese quiche. Actually I made two and froze one.

Easy Ham & Cheese Quiche

This recipe is not only easy, it’s delicious. Because I like to keep things really simple and am not the world’s best baker, I used a store-bought pie crust, but feel free to make your own. I filled it with a mixture of cubed ham, cheese, eggs and herbs. The key is the garlic. I’m of the opinion if you add garlic to anything it immediately tastes better! Feel free to use your own favorite cheese, replace the ham with sausage or change up the seasonings. By the way, my kids loved it.

Ingredients

1 -1/2 cups cubed baked ham
1 (9-inch) frozen ready-to-bake pie crust
1 tablespoon butter
1/4 medium yellow onion, diced
1 clove fresh garlic minced
4 large eggs
3/4 cup half & half
1/2 teaspoon herbs de provence
Sea salt and fresh ground black pepper to taste
1 cup Gruyère cheese, grated
1 cup cheddar cheese, grated

Instructions

    • Preheat oven to 375 degrees F. Place unwrapped frozen pie crust on a baking sheet and bake for 10 minutes. Remove and allow to cool slightly.
    • Add the butter to a nonstick pan and melt over medium-high heat. Add in the diced onion and cook 3-5 minutes or until soft and translucent. Add the garlic and stir until fragrant, about 30 seconds. Remove, set aside, and allow to cool slightly.
    • In a large bowl, whisk the eggs until lightly beaten. Then whisk in the half-and-half, herbs de provence seasoning, and salt and pepper to taste.
    • Gently stir in the cubed ham and both cheeses.
    • Stir in the cooked onion and garlic. 
    • Pour filling into the pre-baked pie crust (still on the baking sheet) and bake for 35 to 40 minutes, or until set and very slightly jiggly in the center.
    • Serve warm with optional garnishes (like chives, prosciutto, baby greens, or avocado) as desired.
