Low Carb Broccoli Cauliflower Salad To Die For

Have I mentioned I am having a love affair with cauliflower? It has a ton of health benefits too. It’s high in fiber and is great source of antioxidants. It also strengthens your immune system and may help reduce the risk of cancer. Cauliflower contains vitamin C, which helps with collagen production, and vitamin K, which may help prevent bone loss. Did I mention I have been a longtime fan of broccoli, too? So this low carb and keto-friendly broccoli cauliflower salad is my idea of heaven. Besides, it has bacon so it’s nearly perfection.

Vegetable salads are always welcome at a summer BBQ or potluck party, so why not bring something that your friends will devour? Besides, there is no cooking involved which is always an added bonus. So without further ado here is my healthy broccoli cauliflower salad recipe.

Low Carb Keto-Friendly Broccoli Cauliflower Salad Recipe

Yields: 8 servings

Prep: 10 minutes | Cook: 0 minutes | Total: 10 minutes

Ingredients:

3 cups raw broccoli

3 cups raw cauliflower

8 slices bacon, cooked and crumbled

½ cup sweet onion, chopped

½ cup cheddar cheese, shredded

½ cup walnuts, chopped

1 cup mayo

2 tablespoons apple cider vinegar

Salt and pepper to taste

Directions:

1. Add broccoli, cauliflower, bacon, onion, cheese and walnuts to a large bowl.

2. In a small bowl, whisk together mayo and apple cider vinegar.

3. Pour dressing over the top of the salad ingredients and toss to completely coat. Season with salt and pepper to taste.

4. Store in the refrigerator until ready to eat.
