Turmeric Lemon Popsicles
These cool, lemony popsicles are such a treat on hot summer days. They might even remind you of being a kid again, while delivering a more grown-up flavor. Refreshing, tangy and easy to make, they’re the perfect frozen snack to keep on hand all summer long.
Health Benefits of Turmeric
Turmeric has been used in cooking and traditional wellness practices for centuries. It’s best known for its vibrant golden color and its active compound, curcumin, which has been widely studied for its antioxidant and anti-inflammatory properties.
While no single food is a magic solution, turmeric can be a flavorful addition to a balanced diet. That’s one reason it’s become such a popular ingredient in everything from smoothies and teas to soups, curries, and frozen treats like these popsicles.
What Does Turmeric Taste Like?
Turmeric has a mild aroma with notes of orange or ginger, and it can have a slightly bitter flavor. In this recipe, the acidity of fresh lemon juice and the sweetness of honey balance out the bitterness beautifully. Plus, there’s just ½ teaspoon of this anti-aging spice in the recipe, so the taste is subtle and not overwhelming.

Popsicles are Fun to Make!
Making popsicles is fun because they’re so simple to prepare. Just juice the lemons, mix the ingredients together, and pour the mixture into your molds. I recommend using an electric juicer to make the process even easier. There are so many colorful molds and fun shapes available, too.
You’ll likely need two sets of molds for this recipe since most come in sets of four or six and this recipe makes 8 to 9 popsicles. Or you can pick up a larger set, like the Windfall 9-piece mold set from Walmart.
I made this recipe with super-ripe, sweet lemons and the popsicles turned out delicious. While you’re mixing, be sure to taste the liquid. You may want to add a little more honey depending on how tart your lemons are and your own personal taste preference.
You’ll also notice that the turmeric and ginger naturally float toward the top of the molds, creating a beautiful ombré effect. For a fun presentation, serve them over ice at your next outdoor dinner party. They look gorgeous, make a great conversation piece, and tend to disappear quickly!
Enjoy these refreshing frozen treats during those long, hot summer days. They’re a simple way to cool down and make the most of the season.
Anti-Inflammatory Lemon Turmeric Popsicles
Yields: 8-9 ice pops
Prep: 2 hours and 5 minutes | Cook: 0 minutes | Total: 2 hours and 5 minutes

Ingredients:
- 1 cup fresh lemon juice
- 1 cup water
- ¾ cup honey (add more to taste)
- ½ teaspoon ground turmeric
- ⅛ teaspoon ground ginger
- Pinch of black ground pepper*
Directions:
- Add all ingredients to a blender and process until smooth. Taste and adjust the sweetness if desired.
- Pour the liquid into popsicle molds and place in the freezer for at least 2 hours to freeze completely.
- When ready to eat, place the bottom half of the mold in warm water for a few seconds to allow the popsicles to easily lift out of the mold.

*Note: Curcumin, the active compound in turmeric, is not easily absorbed by the body on its own. Black pepper contains piperine, a natural compound that may help improve curcumin absorption. If you’re using turmeric in cooking, many people like to add a small pinch of black pepper to recipes for this reason.
Storage Tips
Store popsicles in an airtight freezer-safe container for up to 2 months. For the best texture, let them sit at room temperature for a minute or two before serving.

Notes
*Note: Curcumin in turmeric is poorly absorbed into the bloodstream. So a little tip is to always consume it with some black pepper, which contains piperine, a natural substance that enhances the absorption of curcumin by 2,000%! Therefore, add a dash of pepper to any recipe that calls for turmeric for maximum absorption.
