Nothing beats homemade popsicles and they are easier to make than you think. I love being able to control the ingredients when I make any sort of treat for my family. And they have flipped over my frozen fruit bars. For only 121 calories and 3 grams of fiber each, you will love these red white and blue frozen treats too!

What Makes These Frozen Pops Healthy?

These healthy, fruity frozen pops are loaded with Vitamin C and have 3 grams of natural fiber from the fresh berries. Fresh mint not only adds a delicious flavor it is naturally cooling and helps with digestion. And mint oil has antiseptic and antibacterial properties to relieve indigestion, and promotes a healthy gut. It also boosts your immunity system and improves brain power. No wonder I put fresh mint on everything during the summer.

I use organic fresh fruit because organic has lower levels of pesticide residue. Also the Environmental Working Group (EWG) listed both strawberries and blueberries on the 2023 Dirty Dozen List. The guide is based on results of more than 35,200 samples tested by the U.S. Department of Agriculture and the Food and Drug Administration. The 12 foods with the most pesticides are called The Dirty Dozen. And sadly, both strawberries and blueberries made the “dirty” list this year.

Red White and Blue Homemade Popsicle Tips

  1. If you want to save some money (I know organic fruit can get expensive) you can use frozen organic berries and separate the blueberries from the strawberries and raspberries. I buy a giant bag of the organic frozen berries from Costco to keep in my freezer for smoothies and they will work perfectly here as well.
  2. I prefer using organic light coconut milk I get at Trader Joe’s but feel free to use whatever brand you prefer.
  3. I always use fresh lime juice but you can use the refrigerated kind if you wish.
  4. If you want to eat the popsicles sooner, change the order of the filling around and you won’t have to wait so long. Start with the red raspberry/strawberry puree, then the blueberry puree and finish with the coconut cream and the pops won’t take as long to freeze (but they also won’t be red white and then blue).

Healthy Red White And Blue Frozen Popsicles ingredients

Ingredients

  • 1 cup organic strawberries, hulled and roughly chopped
  • 1 cup organic raspberries
  • 2 cups organic blueberries
  • 6 large springs of fresh mint
  • 3 tablespoons fresh lime juice
  • 4 tablespoons coconut cream
  • 1/2 cup light organic unsweetened coconut milk
  • 2 tablespoons honey
  • A six 3-4 ounce frozen Popsicle mold

Instructions

1. Place the popsicle mold in the freezer 30-60 minutes prior to beginning.

2. In a blender combine the strawberries, raspberries, 1 tablespoon lime juice. 1 tablespoon coconut cream, 1 tablespoon honey and 3 mint leaves and puree until smooth.

3. Carefully divide and pour puree in even amounts into each mold (about 1/3 or so of the way up).

4. Cover mold and place back in the freezer for 30 minutes.

5. Meanwhile, rinse out the blender and then add coconut milk, 2 tablespoons coconut cream and 1 tablespoon of lime juice. Puree until smooth.

6. Remove the mold from the freezer and pour equal amounts of the coconut cream into each mold (there will not be as much of this layer). Rinse out the blender.

7. Cover and place mold back in the freezer for 30 minutes so it sets a bit.

8. Meanwhile combine blueberries, the remaining 1 tablespoon lime juice. 1 tablespoon coconut cream, 1 tablespoon honey and 3 mint leaves and puree until smooth. 

9. Remove the popsicle mold from the freezer and fill to the top with the blueberry puree. Replace the cap and add the popsicle sticks.

10. Replace mold back in the freezer at least 4 hours (until it sets) or overnight. Let the popsicles rest at room temperature for 5 minutes before pulling from the mold and serving.
