Flourless peanut butter blondies are not only delicious, they are the ideal gluten-free dessert. They are so chewy and easy to make, the whole family will love them and I bet they won’t even know they are healthy(ish).
These peanut butter blondies have chocolate chips, and who doesn’t love chocolate and peanut butter together? In fact, I would (and have) eaten a little for breakfast. They go great with a cup of coffee.

What is a Blondie?
What is a blondie and how is it different than a brownie? The main difference comes down to the chocolate. There is no chocolate in a blondie (unless you add chocolate chips). Blondies are sometimes referred to as “blonde brownies” because they are made without cocoa powder and have a delightful vanilla flavor rather than a rich chocolate one. According to my research it seems the blondie came before the brownie by about a decade. I would say they are cousins.
This blondies recipe has only 7 ingredients, most of which I am sure you already have in your pantry. And while they are a decadent treat, they are naturally-sweetened (with peanut butter) and flourless – which makes them naturally gluten-free!
Flourless Peanut Butter Blondies
Yields: 9-12 servings
Prep: 5 minutes | Cook Time: 20 minutes | Total Time: 25 minutes
Ingredients:
- 1 cup peanut butter
- ⅓ cup maple syrup
- ½ teaspoon vanilla extract
- 1 large egg
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ½ cup chocolate chips
- Optional: coarse salt for garnish
Directions:
- Preheat oven to 350 degrees F. Line an 8” square pan with parchment paper and set aside.
- In a mixing bowl, add peanut butter, maple syrup, vanilla extract, egg, salt and baking powder. Use a mixing spoon to mix until ingredients are incorporated. Fold in chocolate chips.
- Pour the batter into the prepared pan and use a spatula to smooth it into an even layer. Sprinkle on coarse salt if desired.
- Bake for 20 minutes or until the top is golden brown. Allow the blondies to cool completely before slicing and serving.
Notes: Store bars in the refrigerator to keep them firm. They get crumbly when left at room temperature.
