They are easy to make, my kids love them and they won’t make a mess when they are eating them. Sandwiches can be prepared in healthy ways, too. That’s why I like to start with homemade bread, so I know exactly what ingredients it contains. This Paleo sandwich bread recipe is easy-to-make, moist and delicious. It is also nut-free, which is a bonus if anyone in your family has food allergies, is on a restricted diet or can’t bring nut products to school. Here’s how to make bread and feel like Martha Stewart with this easy Paleo sandwich bread recipe. It’s a simple way to provide a homemade lunch for your family.

Easy Paleo Sandwich Bread Recipe

You may be thinking, “I’m not going to make bread!” I know, it is usually such a major project, time-consuming and tricky to master. But this is an easy sandwich bread recipe. There is no yeast to deal with and it only takes 5 minutes to prepare. You make one loaf at a time (similar to making a banana bread). Baking bread is a fun thing to do in the fall because it fills your home with wonderful aromas. Your family will know you did something special for them, especially when they taste this delicious bread.

This bread is tasty to eat on its own, but I have sandwich ideas to keep your meals completely Paleo. The Paleo diet is based on the types of foods presumed to have been eaten by our early ancestors, before we started farming and stopped hunting and gathering to survive. The diet emulates what our Paleolithic ancestors would have eaten, focusing on fresh, organic produce, lean, healthy meats and nuts and seeds for healthy fat.

Peanut butter and jelly would not be considered Paleo. However you can fill your sandwiches with grilled meats like chicken or pork or try making avocado toast (yum), or an egg sandwich. You can also think about chicken salads, fish salads or even try sliced Paleo meatloaf to make sandwiches. To keep your diet strictly Paleo, avoid artificial ingredients, processed foods, partially hydrogenated oils, legumes, potatoes and dairy. Opt for organic meats, fruits and vegetables whenever possible.

 

Paleo Sandwich Bread (Nut-Free) Recipe

Paleo Sandwich Bread (Nut-Free) ingredients

Yields: 1 loaf

Prep: 5 minutes | Cook: 1 hour | Total: 1 hour 5 minutes

Ingredients:

6 large eggs

2 cups cassava flour

1 teaspoon baking powder

1 teaspoon himalayan pink sea salt

1 tablespoon apple cider vinegar

1 tablespoon honey

½ cup avocado oil

½ cup filtered water, room temperature

Directions:

1. Preheat oven to 350 degrees F. Spray a 9×5 loaf pan with cooking spray or add a piece of parchment paper to the pan (keep side pieces long to use as handles).

2. Beat eggs in a medium mixing bowl. Add apple cider vinegar, honey, avocado oil and water to the bowl (not necessary to mix).

3. Add cassava flour, salt and baking powder to a large mixing bowl. Whisk to combine. Gradually add the wet ingredients into the dry ingredients and stir to combine, breaking down larger lumps.

4. Pour the batter into prepared loaf pan and place in preheated oven for 1 hour.

5. Remove from oven. Carefully remove bread from loaf pan and place on a cooling rack to cool for 1 hour before cutting.

6. Allow bread to come to room temperature (at least 2 hours) before placing in an airtight container.
