Gingerbread Energy Bites

These vegan and gluten-free energy bites will keep you 0n the straight and narrow.

Ingredients

  • 1 cup dates
  • ¾ cup pecans
  • 1 tbsp molasses
  • 1 tbsp flaxseed ground
  • 1 tsp cinnamon
  • 1/2 tsp ginger ground
  • ¼ tsp cloves ground
  • ¼ tsp nutmeg ground
  • ¼ tsp salt
  • 1 oz 70% dark chocolate

Instructions

  1. Place a piece of parchment paper on a plate and set aside.

  2. Place dates on a cutting board and slice down the center to remove the pits.

  3. Roughly chop up the pitted dates and place them in a food processor. Pulse a few times until they break down into a thick paste consistency.

  4. Add the remaining ingredients with the exception of the chocolate to the food processor and pulse until all ingredients are broken down and well incorporated.

  5. Scoop up ingredients in a teaspoon and roll into a ball using clean hands. Place balls on prepared plate.

  6. Place the dark chocolate in a small glass bowl and microwave until melted. Pour the melted chocolate into a small Ziploc bag and cut off just the edge of one corner.

  7. Drizzle the melted chocolate over the energy balls. Place in the fridge to allow the chocolate to harden.

  8. Serve.

  9. Store energy balls in an airtight container in the fridge for up to 1 week.
