The Most Healthy and Easy Meatloaf Recipe

Did I forget to say delicious too? Yes, like most of us I have been cooking up a storm since this pandemic started. And frankly, I am growing a little tired of it. However, my healthy turkey easy meatloaf recipe seems to be hit with everyone in the family. Good thing they love it because it’s super easy to make and I had all of the ingredients on hand. You probably do too.

Personally I am always a fan of a meatloaf recipe with ketchup baked on top. So if you are like me you are going top love this one. Generally meatloaf should not be that hard to make. If it calls for a zillion ingredients and steps, run. I’ve tried both kinds and easy meatloafs still reign supreme. I’m all about the reward for little sweat equity.

Healthy and Easy Meatloaf Recipe

It’s funny. I hated meatloaf as a child and would freak out whenever my mother tried to serve it. Now I adore it. In fact I begged my mom to make her amazing, yet deathly unhealthy meatloaf when my oldest was little. He loved it so she would make it and ship it so I could freeze it and serve it to him all the time!

What makes this healthy turkey meatloaf so good? Well it has ground turkey instead of ground beef so it’s a bit healthier. It also has sauteed onions with their own distinct flavor profile so the recipe is a little more complex tasting. It’s not one note. I serve it with mashed potatoes (mashed cauliflower for me) and peas…and then to the horror of my family I eat it all together. I like my bite to have some meatloaf, mash and peas. But that’s me.

Easy Turkey Meatloaf Recipe

Prep Time: 15 minutes  |  Cook Time: 1.5 hours

Ingredients:

1 large yellow onion chopped

1 tablespoon extra virgin olive oil

1/2 teaspoon fresh ground pepper

1 teaspoon kosher salt

1/4 teaspoon dried thyme leaves

3 tablespoons of Worcestershire sauce

6 tablespoons chicken broth or white wine

1 teaspoon tomato paste

2.5 lbs ground turkey breast

3/4 cup plain dried bread crumbs

2 eggs beaten

1/3 cup ketchup (or a little extra if you love it like me)

Instructions:

1. Preheat over to 325 degrees F.

2. In a medium saute pan, over medium heat, cook the onions, olive oil, salt, pepper and thyme until translucent (not browned).

3. Add the Worcestershire sauce, chicken stock (or wine) and tomato paste. Mix well. Let cool.

4. In a large bowl combine the ground turkey, bread crumbs, eggs and onion mixture. Mix well.

5. Either shape the mixture into a rectangular loaf on an ungreased sheet pan or spread it out into a bread pan.

6. Spread the ketchup evenly on top.

7. Bake for 1.5 hours (internal temperature of 160 degrees) or until cooked through.

8. Serve

Tip: It freezes well and leftovers make great sandwiches.
