National Chocolate Chip Cookie Day? We have the BEST recipe ever!

I know there is a “National” Day for everything. (Did you know was National Watermelon Day?) But this is one day I can get behind! It’s National Chocolate Chip Cookie Day on August 4th! I mean, who doesn’t love Chocolate chip cookies? That’s like not liking pizza. And that’s just crazy talk.

So over the years I have searched high and low for the perfect/best chocolate chip cookie recipe I could find and I finally found it. I had to doctor it a bit, because that’s what I do and I like things to taste the way I like them to taste…especially if I am going to blow the calories. Leave a box of Chips Ahoy in front of me and I won’t touch them. Leave a plate of MY chocolate chip cookies in front of me and I’ll eat myself sick. I am going to share my recipe with you because people who don’t share recipes suck.

So you ready? Grab a 12 oz. bag of Ghirardelli Semi-Sweet Chocolate chips and follow the recipe on the back. Yep. That’s it. But add a couple of things!

nNational Chocolate Chip Cookie Day recipe ingredients

INGREDIENTS

2 1/4 cups unsifted flour
1 tsp baking soda
1/2 tsp salt
1 cup of (2 sticks of butter) I change this to a cup of coconut oil! It tastes better.
3/4 cups sugar
3/4 cups brown sugar packed
2 tsp vanilla (I use 3 because I love vanilla). Splurge on the good stuff. It makes a huge difference.
2 eggs
2 cups Ghirardelli Semi-Sweet Chocolate Chips (They are truly better than the rest.)
1 cup uncooked oatmeal

So to be clear I basically follow the recipe on the bag; but I exchange the butter for coconut oil, add extra good quality vanilla and I add a cup of oatmeal for extra crunch (and my kids don’t notice it so I think they are somewhat healthier).

PREPARE

Preheat oven to 375 degrees

Stir flour with oatmeal, baking soda and salt and set aside. Beat coconut oil with sugar and brown sugar. Add vanilla and eggs. Add the dry mixture into the the creamed mixture and stir in the chocolate chips.

Drop by tablespoon onto an ungreased cookie sheet.

Bake for 9-11 minutes or until golden brown.

DRINK

INGREDIENTS

45ml. Tito’s Vodka
15ml. Butterscotch Liquor
15ml. Bailey’s
1 chocolate chip cookie for garnish

DIRECTIONS

  1. Pour all ingredients into a shaker filled up halfway with ice and shake.
  2. Rim a martini glass with chocolate syrup.
  3. Strain the ingredients into the martini glass and serve.
  4. Garnish with chocolate chip cookie.
