The Best Homemade Chewy Pumpkin Chocolate Chip Granola Bars Ever

My kids can destroy a box of granola bars in no time. And they may be healthier than a bowl of cereal, but not by much. Well if you make them yourself they can be! Since I am on a pumpkin everything kick these days (I found my favorite pumpkin puree on sale and I could not resist) I figured why not try my hand at making homemade granola bars? And while I’m at it, why don’t I sneak some other healthy ingredients in them? I’m no dummy. I know if I add chocolate chips my kids will eat just about anything. They turned out to be the best chewy pumpkin chocolate chip granola bars ever!

These pumpkin granola bars are healthier than the store-bought kind because they have tons of fiber, no white sugar (they are sweetened with maple syrup and nut butter) and loads of antioxidants with the help of pure pumpkin. They are only 146 calories, 21 grams of fiber and 4 grams of protein per bar.

Easy to Make Pumpkin Granola Bars Recipe

This chewy granola bar recipe is so easy to make. It takes only 10 minutes to prep and 20 minutes to bake. That means you can be eating them in half hour…because they are so good warm (OK, maybe let them sit for 5 minutes before consuming). They also contain only 9 ingredients most of which I’m sure you already have in your pantry. Chewy Pumpkin Chocolate Chip Granola Bars

Yields: 12 servings
Prep: 10 minutes| Cook Time: 20 minutes | Total Time: 30 minutes

Ingredients

2 cups rolled oats
1 tablespoon ground flaxseed
1 ½ teaspoons pumpkin pie spice
¼ teaspoon salt
½ cup pure pumpkin
⅓ cup peanut butter (sub with your favorite nut butter)
⅓ cup maple syrup
1 teaspoon vanilla extract
⅓ cup mini chocolate chips

Directions:

  1. Preheat oven to 350 degrees F. Add a piece of parchment paper to an 8×8 baking dish, using enough paper to create flaps on the sides for easy removal. Set aside.
  2. In a large mixing bowl, add oats, ground flaxseed, pumpkin pie spice and salt. Mix to combine.
  3. In the same bowl, add pumpkin, nut butter, maple syrup and vanilla extract. Mix until all ingredients are incorporated. Fold in mini-chocolate chips.
  4. Transfer the dough to the prepared baking dish. Use a spatula to evenly flatten the dough.
  5. Bake for 18-20 minutes or until the bars turn a light golden brown.
  6. Remove from oven and cool to room temperature before slicing into bars.
