Chicken In Cast Iron Skillet

Last Christmas my husband gave me (or himself) a cast iron skillet and we have been having fun with it ever since. We have even used it on the grill! Nothing gives meat the same great flavor as a cast iron skillet which can be used for sautéing, pan-frying, searing, baking, braising, broiling, roasting, and a whole host of cooking techniques. Skillet chicken has quickly become an obsession and I have found you don’t need a lot of oil to pack a flavorful punch.

Skillet Chicken Breast For A High Protein Diet

I eat a high protein diet and right now at a bit of a calorie deficit so I can get a few more pounds off. So believe it or not, this skillet chicken breast recipe is perfect for my eating plan. Each serving is 386 calories and a whopping 38 grams of protein! I would pair my meal with some cauliflower rice and a steamed vegetable and for the rest of my family I would serve it with the same vegetable and a side of long grain rice or mashed potatoes. I am always making them a separate side dish but keeping the main protein dish the same for everyone. We ALL adore this skillet chicken recipe.

Healthy tip: if you or someone in your family is lactose intolerant, switch out the butter for ghee which is essentially clarified butter. You will still get that same great butter flavor without the lactose. It will also make this recipe Whole30 compliant.
