Recipe: Easy To Make Apple Cake With Caramel Sauce

Want to be the hit of every party or dinner you are invited to? Make this apple cake with caramel sauce and I promise…mission accomplished! I first tried this cake after my Dad had died. I had no appetite and people kept dropping food off at my mom’s house. One of my mom’s friends made this cake and I was told I had to try it. I did and could not stop eating it! It’s that good. In fact, I think it was all I ate for 2 days.

At any rate I have since been making this apple cake cake for pretty much every dinner I am invited to and my husband’s cousin now requests it for Christmas. I am not a baker. I enjoy cooking more since it’s not an exact science. However, this cake I have mastered. It is easy to make and requires only one big bowl and no mixer. Score!

I have no idea what the calories are and frankly, I don’t want to know. I do know it serves 12.

Apple Cake With Caramel Sauce

Ingredients

1 cup vegetable oil
2 cups sugar
3 large eggs well beaten
1 tbsp vanilla (splurge on the good stuff)
2.5 cups of all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
1 tsp salt
3-4 cups fresh peeled apples (I use a mix of Granny Smith and Macintosh)
1-2 cups chopped pecans (optional)

Sauce Ingredients

I typically double this since everyone will go crazy over it and you may want to just eat the sauce!

1/2 cup butter
1 cup brown sugar
1/4 cup evaporated milk

Instructions

1. Preheat the oven to 350 degrees

2. Butter and flour a non stick bundt pan

3. In a large mixing bowl combine the oil, sugar, eggs and vanilla and mix well.

4. Slowly mix in the flour

5. Mix in the dry spices; baking powder, cinnamon, nutmeg, baking soda & salt

6. Fold in the apples and pecans

7. Pour mixture into bundt pan

8. Bake for 55-60 minutes (should be golden brown on top)

9. Cool the cake

To make the caramel sauce

Combine the butter, condensed milk and brown sugar in a sauce pan on medium heat until it is thick.

Serve

Now invert the cake over a pretty serving platter (should slip out easily) and drizzle half the caramel sauce all over. Serve with extra sauce on the side in case guests want more – and they will.

(If you need to reheat the sauce because you are serving it later, do so in a microwave).
