Sweet Tooth Satisfying No-Bake Gingerbread Energy Bites

I know. It’s hard to eat healthy during the holiday season or even February for that matter. And since I have a terrible sweet tooth, I like to keep something on hand that satisfies my need for something yummy, yet is healthy and gives me some energy when I hit my 4pm slump. These vegan/gluten-free gingerbread energy bites with drizzled chocolate do the trick.

They are super easy to make and require no bake times which is an added bonus.

No-Bake Gingerbread Energy Bites Recipe

Gingerbread Energy Bites

Yields:  16-18

Prep: 15 minutes | Cook Time: 0 minutes | Total Time: 15 minutes

Ingredients:

1 cup dates

¾ cup pecans

1 tablespoon molasses

1 tablespoon ground flaxseed

1 teaspoon cinnamon

1/2 teaspoon ground ginger

¼ teaspoon ground cloves

¼ teaspoon ground nutmeg

¼ teaspoon salt

Optional: 1 oz. 70% dark chocolate

Directions:

  1. Place a piece of parchment paper on a plate and set aside.
  2. Place dates on a cutting board and slice down the center to remove the pits.
  3. Roughly chop up the pitted dates and place them in a food processor. Pulse a few times until they break down into a thick paste consistency.
  4. Add the remaining ingredients with the exception of the chocolate to the food processor and pulse until all ingredients are broken down and well incorporated.
  5. Scoop up ingredients in a teaspoon and roll into a ball using clean hands. Place balls on prepared plate.
  6. Place the dark chocolate in a small glass bowl and microwave until melted. Pour the melted chocolate into a small Ziploc bag and cut off just the edge of one corner.
  7. Drizzle the melted chocolate over the energy balls. Place in the fridge to allow the chocolate to harden. Serve.

Store energy balls in an airtight container in the fridge for up to 1 week.
