The Best Clean and Delicious Healthy Turkey Chili

Now that so many of us are cooking our meals at home, isn’t it best to make them healthy? I actually got this recipe from my boyfriend’s best friend, Ted. I made it several times and now Rich and I call it “Ted Turkey.” This recipe is low sodium, low fat, high protein and packed with superfoods and tasty vegetables. If you are looking for a healthy all-in-one easy meal that will make you feel good, try this Clean and Delicious Healthy Turkey Chili recipe.

Rich and Ted have been friends since high school. Today they are constantly on the phone discussing weightlifting, going to the gym, jui-jistsu, flipping 500 lb. truck tires (Ted does that), staying fit and eating right. They sound like Lauren and me when we discuss how to look and feel our best with fitness and healthy eating as we get older. Only we don’t flip truck tires.

Men over 40 like to turn back the hands of time just like we do! Only men don’t explain recipes in the same amount of details as we do.

Clean, Delicious Healthy Turkey Chili

This is the text message Rich forwarded to me from Ted for this recipe: “Ground turkey breast, onion, red pepper, green pepper, kidney beans, diced tomatoes… clean, delicious.” This was all he wrote, along with a quick snapshot of his entree cooking in a frying pan. I had to zoom in to see exactly what it was.

So, instead of asking Ted more questions (now I was acting like a guy), I bought all the ingredients and figured out the quantities as I went along. Please also note that Ted did not include any seasonings (like maybe chili powder for turkey chili?) However, I knew he would want me to get the freshest ingredients, organic and low in sodium.

Here is my version of Ted’s turkey recipe. This turkey chili is indeed clean and delicious. You can make it in advance, store it in the refrigerator and heat up individual servings in the microwave. It is so low sodium that we have been adding a sprinkle of sea salt to our servings. Shh… don’t tell Ted!

Healthy Turkey Chili Recipe

Prep Time: 10 minutes  |  Cook Time: 45 Minutes  | Makes 10 servings  |  around 200 calories per bowl

Ingredients

2-1/2 lbs ground turkey breast (99%)
2 tablespoons olive oil
1 small onion (3/4 cup) chopped
3 large stalks of celery (about 1 cup) chopped
1 red pepper (about one cup) chopped
1 green yellow or orange pepper (about one cup) chopped
2 cans (14.5 oz each) no salt added diced tomatoes
1 can (15 oz) low sodium organic kidney beans
1 tablespoon chili powder or seasoning of your choice
Salt and pepper to taste

Instructions

1. Chop up celery, onion and peppers.

2. Heat olive oil in a large pot over medium high heat. Add in onion, celery and saute for 5 minutes, stirring frequently.

3. Add chopped peppers and continue stirring for another minute.

4. Add in ground turkey, break up meat and cook until no longer pink. Add in chili powder or seasoning. I like to use Back of the Yards Garlic Pepper Rub from The Spice House for my seasoning and it is delicious.

5. Next add in tomatoes, then kidney beans. Bring to a boil, then reduce heat and simmer for 30-45 minutes.

6. Serve into bowls. Use sea salt and pepper to taste.

This tastes so fresh! The peppers and celery bring out so much flavor that if you are on a sodium-restricted diet, it doesn’t need salt.
