One Skillet Meal For Broccoli Cheese Fans

My family loves broccoli and cheese, and together with the red pepper and spices, this recipe melts into a luscious chicken entree that doesn’t take too much planning. It’s made with spices you probably already have on hand, so all you have to do is pick up some chicken breast, broccoli and cheese. And you may need to purchase avocado oil if you don’t already have it.

Why Avocado Oil?

This recipe calls for avocado oil, which is something you may like to always have in your pantry. It is a very healthy cooking oil and has high levels of the antioxidants like vitamins E and lutein (naturally occurring carotenoids found in green plants) and contains monounsaturated fatty acids. It has a high smoking point for cooking, which makes it perfect for frying and stir frying. And it tastes great because it has a rich buttery flavor from the avocado.

Healthy Low Carb Meal

I feel confident when I make this meal because it is low carb and offers protein from lean chicken breast. I like to serve it with a tossed salad to add even more color. It is a super-satisfying and tasty meal that looks beautiful on the plate. Your family will think you fussed all day, but it will only take you 10 minutes to prepare and 25 minutes to cook this delicious low carb broccoli cheese stuffed chicken. Keep this recipe in your meal planning arsenal when you want to switch things up in a hurry.

Low Carb Broccoli Cheese Stuffed Chicken

Yields: 3 large servings

Prep: 10 minutes | Cook: 25 minutes | Total: 35 minutes

Broccoli Cheese Stuffed Chicken ingredients fountainof30 

Ingredients:

3 large chicken breasts

1 ½ teaspoon garlic powder, divided

½ teaspoon onion powder

¼ teaspoon paprika

¼ teaspoon himalayan pink sea salt

⅛ teaspoon black pepper

1 cup broccoli florets, finely chopped

½ cup red pepper, finely chopped

1 cup colby jack cheese, shredded

1 tablespoon mayonnaise

1 tablespoon avocado oil

Directions:

  1. Preheat oven to 425 degrees F.
  2. Add onion powder, paprika, salt, pepper and ½ teaspoon of garlic powder to a small bowl. Stir to combine. Sprinkle onto both sides of chicken.
  3. Place seasoned chicken on a cutting board. Use a large, flat spatula to press down on the top of the chicken breast and use your other hand to insert a knife into the thickest side of the chicken. Cut a pocket, being careful not to cut all the way through the other side and stopping before you get to the end of the chicken (creating a pocket, not a flap).
  4. In a medium-sized microwave-safe bowl, add broccoli and 2 tablespoons of water. Cover with plastic wrap and microwave on high for 3 minutes. Remove plastic wrap and drain any excess water.
  5. Add red bell pepper, cheese, mayo and remaining 1 teaspoon garlic powder to the bowl with the broccoli. Stir to combine.
  6. Stuff each chicken breast with one third of the cheese and broccoli mixture.
  7. Add the avocado oil to a cast iron skillet on medium-high heat. After the pan is heated through, add the chicken breasts – top side down. Allow to cook for 4-5 minutes each side to brown.
  8. Place pan in the oven to continue cooking the chicken an additional 12-15 minutes or until chicken cooks through and juices run clear. Allow the chicken to rest for 5 minutes and serve warm.
